Only difference between Cow and Pony girls advancement is that Cow Girls receive a drug that makes them lactate. This drug needs to be taken at regular intervals. Probably once a week or you will be unable to milk her.
Cow Girl Milking - How much milk she produces Mooing - How realistic her moos are Stalled - How happy the cow girl is to live in a stall. Also increases her chances to become pregnant.
once one of these skills are at 100 you can once again go back to the farm and have her evaluated.
High Milking makes her into a Milk Cow.
High Mooing makes her into a Moo Cow.
High Stalled makes her into a Stall Cow.
Milk Cow Volume - how much milk she can produce per session. Quality - how good of milk she can produce. Higher quality milk sells for more. Production - her ability to produce milk with out use of the drug. the at 100 means that she no longer needs the lactation drug to produce milk.
Moo Cow There are no skills attached to this class. As this is meant to be a well behaved for the wealthy to use as they see fit. the benefit here is Moo Cows have a high auction sell value.
Stall Cow (this is one of the most inhumane of the slave trainings) Lethargy- the higher this stat the less the slave needs to move. Breast Size - how big the breasts are on the slave. At 100 the slave can no longer move under their weight. Nipple Fucking- For Stalled Cows the nipples expand and can be used as sexual organs as well.
Pig Girl (pig girls cannot be maids and vise versa) Wallowing - her ability to survive living in filth Eating - her ability to survive eating anything Size - how much weight the girl has put on to make her look more pig-like.
once all of these skills are at 100 you can once again go back to the farm and have her evaluated. there is only one advance class for Pig Girl and that is Pig Slut. It is the most inhumane training and usually considered an evil act. The slave tends to be insane already reaching this class but those that aren't don't keep it for long
first the girl's body is modified in 3 ways, Her front teeth are removed (for better blow jobs), then she is usually given a drug to make her grow an extra set of breasts, and finally her vagina and womb are modified to be able to take and bear any kind of creature and its off spring. The main use for a true pig girl is that she can breed true with anything and she can can have litters of up to 4. Also her gestation time is extremely low around 3 months.
Pig Slut Pregnancy- increases chance to become pregnant Gestation- reduces the time it takes from becoming pregnant to giving birth. Breeding- increases the chances of the infants from a pregnancy to be the same as the father's species.

Suggestions
As no one commented, I have taken the liberty of renaming Body Guard to Attendant.
I've updated the list to include these farm animals, but I do have some comments.
Rename the Race Pony's 'Dressage' to 'Imitation' or 'Impersonation.'
Rename the Work Pony's 'Sexual' to 'Intercourse,' or anything else, really.
Rename the Work Pony's 'Endurance' to 'Resilience' or 'Fortitude.'
I recommend dropping the 'Stallion Pony Girl.' A class that has two of it's three traits focusing on the physical characteristics of its penis is strange, redundant, illogical, and extremely arbitrary.
Rename the Cow Girl's 'Stalled' to '[Stall] Tolerance.'
I recomend dropping the 'Moo Cow.' A class without any traits undermines the point of having a class system. Furthermore, while the rich of any culture may be strangly willing to pay obscene amounts of money for good without any utility, those goods typically do not include useless cows. A cow trained at mooing is irritating, not valuable. Especially if they have access to cows that have uses.
I recomend dropping 'Stall Cow.' Their is really no reason for this class to exist, save to offer the player the unique ability to explore his or her own depravity. Because that depravity is fully explorable with the pig slave route, and because dropping this and Moo Cow both streamlines the tree and allows us to make the Milk Cow a more useful (but harder to achieve, as we could make the Milk Cow require max Milking, Mooing, and Stalled/Tolerance) class, it has no use.
If you don't drop the Stall Cow, Rename the Stall Cow's 'Lethargy' to 'Patience.' I really think we should drop the Stall Cow.
The pig slave is the most fucked up thing I ever heard, but makes sense from a gameplay standpoint. I'm not sure about the 'Size' trait, but otherwise I won't complain.

Dressage is the official term used in equestrianism so that is why it was chosen.
I am all for dropping Stall and Moo cows but would like a second advanced class for Cow girls. And didn't really want to go down the Meat Cow route for obvious reasons.
Thank you for the complement on Pig Slave it's kinda where I was going with it.
I would like to keep the stallion pony girl as well considering there is niche of people who like that thing. It'll probably be changed in the way it works tho.
I think Sword Maid sounds the best for that class right now as attendant is not quite right either.
For the Work Horse I don't want to really interfere with other classes in the future Fortitude and resilience are both probably gonna end up on combat classes somewhere. and as for Sexual how about Sexual Usage to better define the skill.

Don't mention it. It was an honest observation.
If you can work on the Stallion Pony Girl a bit, I'm interested. Right now, though, it's pretty borderline.
I agree that Attendant isn't all that great. But I don't like Sword Maid or Body Guard either. The name Still needs thought, really.
I suggested resilience & Fortitude because, as you noted, you've used Endurance twice now. I don't mind Sexual Usage, but I still think it has room for improvement.
The more people, the more thought, the better result. Don't mention it.

Moxie implies some sort of sass, which isn't too appropriate for a slave that you're forcing to act like a horse.
Persistence, however, is pretty close to perfect.

Maybe Moxie can be a stat for one of the whore classes. Or for the Attendant (guess I'll call it this till the name gets sorted out).
About the cows, there can probly be an event or two with showing them off, so maybe for the second advanced class, a Show Cow or something similar?

A show cow just seems like a more ridiculous (and redundant) version of the Show Pony. With a cow, there really aren't many sensible options. Maybe a Grazing Cow, that helps clear vegetation (such as that caused by The Green)? Of course, that seems to be more the domain of the pig, given the attributes. However, the Cow currently has the extremely useless 'mooing' attribute, which can always be modified.

Redoing the S&M tree to make it fit in better with the other class types
S&M Pet Bondage -the basics of this kind of play Discipline -how likely the slave is to have more extreme acts done to her Control -her willingness to do this kind of play on others
upon reaching 100 in both Bondage and one of the other skills you take her to Yuki to advance.
High Discipline has her advance into the Submissive Slave class
High Control has her advance into the Dominatrix Class
Submissive Slave Whipped - slaves skill in being whipped Tied -slaves skill in being tied Humiliated -slaves skill in being humiliated
Once a slave has the Submissive Slave class at 100% you can take her back to Yuki were she advances to the Masochist class. Masochists receive a couple abilities first anytime they are whipped tied or humiliated their happiness and lust go up. Also anytime they receive damage in combat there happiness and lust go up.
Masochist Masochism- the higher this skill the higher the benefits stated above. Healing- how quickly the slave heals naturally from wounds and such. Willingness- This goes above high obedience the higher this skill the more the slave is willing to do include severe body mutilation.
Dominatrix Whipping - slave's ability to whip other slaves Tying - slave's ability to tie up other slaves Humiliating -slave's ability to Humiliate other slaves.
Once a slave has Dominatrix at 100% you can take her back to Yuki to become a Sadist.
Like the Masochist the Sadist receives similar benefits for hurting others.
Sadist Sadism -the higher this skill the higher the benefits stated above. Anatomy - the Sadist learns where to inflict the most pain on her target. Dominance- the slaves willingness to do even more depraved acts on others.
I think I like this version better tell me what you think. got 2 more new base utility classes to put up later.

I think one of the dominatrix classes should have a stat dealing with their 'presence'. kinda hard to explain. like they have a 'queenly' aura where they know that everything they say 'will' be done, or so help that person. and about the advancement: maybe Sadist first then Dominatrix.
swordwind: i agree with the cow thing. didn't really see the show pony. way i figured it, the mooing stat might fit in with the show cow.
could always replace mooing with grazing but that might be pointless.

So how about switching Dominance to Domineering and basically make it that the higher Domineering is the more likely people are to obey your slave. and here they are
Merchant Rumors -the slave's skill in rumor-mongering Luck - the slave's ability to get the best deals(influences how much items are bought for also influences rare/magical item find) Trading - the slave's ability to sell items and get the best price for them (influences how often and how much items and slaves sell for)
The merchant class splits into 2 classes the Bureaucrat and the Shop Keeper
to become a Bureaucrat the slave needs high Rumors and Trading.
to become a Shop Keeper the slave needs high Luck and Trading.
A Bureaucrat is some one who handles the red tape and paperwork for others they are also the ones who are in charge of selling people so they can become elected officials. as such they require a literacy license.
Bureaucrat Bureaucracy- the Slave's ability to handle red tape and paper work. Politics - slave's ability to read local politics and promote their candidate or mud rake their opponents. Delegation - ability to distribute tasks to make the goal more efficient.
when the slave reaches 100% in Bureaucrat she can advance to the Secretary skill. This also requires the non-supervised license (which allows her to go about the city unsupervised.) The main benefit to the secretary is you get a calendar that shows upcoming events and deadlines. (i refer to negotiations this means any sort of meeting such as a contract signing or inviting people over for diner) the slave is meant to be the ultimate personal assistant, being able to coordinate your meeting and affairs with little or no supervision.
Secretary Linguistics- How articulate your slave is in negotiations. Presence- How controlling your slave is over others in negotiations. Tasking- The slave's ability to properly manage time.
or something like that
Shop Keeper basically you can leave that girl to run a shop of her own with similar abilities as the merchant.

Going back to the Farm animals, I had a thought. There didn't seem to be much said about the ability to breed. (and sorry I am really bad at naming.) Maybe: Stallion Pony Girl Sexual usage - her ability to please sexually Endowment - Length, Girth and similarity to a true pony Recessive - Likely hood of the mother's traits being passed on. And for a second Cow Girl class - maybe achievable after you max milk cow. Breeding heifer Fertility - Likely hood of becoming pregnant. Quality - The quality of her offspring. Gestation - How often she can give birth. My thoughts with these is that if you succeed in getting a High quality pony, or milk cow, you can have the ability to breed future generations. And say the offspring of a prize winner would sell for more even untrained then your average untried one. Just a few thoughts I had. I unfortunately have no idea how they could be implemented .

I like the ideas leave and welcome to the boards.
I can see both those being added probably need to change the skill names. I think we are trying to stay away from the exact duplicates of skill names.
considering the game is still in the beginning stages of production we all barely know how most of the classes are gonna work in the end.
